At our factory in Hittfeld, we combine traditional aging methods with innovative approaches to give our beef the best possible character. Here, we produce for our stores in Eppendorf and Hittfeld. Depending on the cut of meat and the desired flavor, we use various methods – from classic air aging ( dry aging ) to vacuum aging ( wet aging ) to special processes like tallow aging .

We ensure precisely controlled conditions – temperature, humidity, and storage time are optimally balanced. Dry aging intensifies the flavor , while wet aging preserves juiciness. Tallow aging imparts additional flavors and a special touch to the meat. This is how we individually refine each piece for a unique taste experience .
